MPM: Menu Planning Monday - 9/15/08

This week is the first of the next three that have me in a tailspin. We have started the countdown until we move (15 days in counting) and I have really had to work hard to plan out meals, using up food, perishables first and so on. Although it takes lots of effort and time, I am finding myself feeling a sense of relief when we finish something up and use the remainder of an item.

About two weeks ago, I went to Costco and the butcher to stock up on our usual basics (and a few extras), ironically within a few days was when the offer on the house came in, which of course made me panic a little. I figured we might be close, but for the most part we should be able to use everything before we would be moving. So yesterday, I actually sat down in front of the freezer and planned out dinners for the next 15 days.

MONDAY
Cordon Bleu with Wild Rice and Cauliflower (we didn't end up having them last week)

TUESDAY
Sirloin Chili with Corn Cake Toppers

WEDNESDAY
Pizza (Mom's Night Off)

THURSDAY
Bacon Wrap Fillets with grilled corn on the cob

FRIDAY
Baked Pork Chops with Apple Glaze

SATURDAY
Taco Night

SUNDAY
Chicken Stir Fry
