Back from vacation blues

I have the Monday blues! I took last week off for our spring break vacation.

We headed down to San Francisco California and enjoyed some long over-do relaxing, WARM WEATHER and SUNSHINE! We got a chance to see the bridge, walk the wharf, shop in Chinatown and of course, visit the Jelly Belly factory (which was the highlight of the trip for the kids).

We came home Thursday, and it has taken me this long to get myself organized and back on track.

The first order of business was getting my meal plan down and off to the grocery store. Check.

The second order of business was to sort through the 150+ emails and get my to-do list in order. Check.

It's hard for even organized people to get back into the swing of "reality" after being gone for a week. It feels good to have a handle on what needs to get done in the coming week.

I wasn't feeling very creative when planning out my meals for the next few weeks. After eating out for a whole week, it's nice to get back to boring old home cooking again! Here are just a few of my meal ideas for the coming weeks...

Megan's Menu Ideas
Baked Potato Skins
Chicken Baked Steak with Smashed Potatoes
Kielbasi with Risotto and Broccoli
Pork Loin with Black Beans
Vegetable Soup
Chicken Enchilada's with Spanish Rice
Turkey Meatloaf with Noodles
Pork Schnitzel
Turkey Burgers and fries
Pasta Primavera
and garlic bread
Baked Chicken with grilled veggies
Tri-tip roast with onion sauce

Hi Megan, I like reading what you do for menu planning. I am always impressed and think you really have fancy meals. I have been inspired and we actually planned 6 weeks in advance and it has been wonderful not to wonder what is for dinner. Welcome home, you have really gone to town and got a lot done. That many emails can be daunting.
